A·T Bistro, short for Au Troisieme, was born in the summer of 2022.
Owner, Bobby Pollette is born and raised in Kailua Kona Hawaii. Bobby began cooking at the Four Seasons when he was just 16. Not knowing much about food, other than he wanted to become a chef, he was mentored and trained there, influencing his unique take on flavor profiles now.
Bobby bounced between Aspen and Palm Beach with his catering company, specializing in high-end entertainment and parties. Catering is still taking place in Dallas and A·T Bistro is his latest venture.
